Stamina is better to have IMO. If you are decent you don't really need extra hearts and there is also food to increase your heart count temporarily. You do however need 13 hearts later on and you get 4 just by playing through the main quest. I personally found the game a lot more enjoyable with 3 circles of stamina. 1.
